These are so fun for the kids to put together! Maddie May and Chloe Rae enjoyed stacking the ingredients in the muffin tin and watching the Pizza Cupcakes puff up while they cooked. You can use your favorite pizza ingredients… sausage, onion, olives, green pepper, pineapple, Canadian bacon… Whatever strikes your fancy. We went with the classic Pepperoni this time. You could definitely experiment with sauces too… Prefer bianca sauce? Buy a jar of alfredo instead of the red sauce… pesto or caponata might be good too!
Gather your ingredients:
2 tubes of Pillsbury “Grands” refrigerated biscuits (you’ll have 4 extra)
garlic and onion powder
grated Mozzarella cheese
1 jar pizza sauce (we used Ragu “Pizza Quick” sauce)
24 pepperonis (or a handful of mini pepperonis)
Using small star and heart shaped cookie cutters, cut 12 of the pepperonis into shapes. Set aside.
Set all of the ingredients out in advance so the little chefs can get right to work. Remember, kiddos have a limited amount of patience and short attention spans. 🙂
~ Preheat oven to 425 degrees F.~
Moosh one biscuit into each of the 12 ungreased muffin tins.
Now add a little cheese to each biscuit cup (approximately 1 Tablespoon.)
Next put about 1 Tablespoon of pizza sauce over cheese in each cup and sprinkle some onion and garlic powder over the tops of the pizza cups.
Now put a whole pepperoni over the sauce in each of the cups.
Now add more Mozzarella cheese…
Sprinkle on some Parmesan cheese…
…and a pepperoni shape on each of the pizza cups…
Now they’re ready to bake!
Place pan in preheated 425 degree oven for 10 minutes or until golden and cheese is melted.
Remove pan from oven and allow cupcakes to cool a bit before removing from pan.
Cut in half…
Serve with extra, warmed sauce for dipping!
